Antonis Selekos, a renowned pastry chef from Greece’s only two-Michelin Starred restaurant, Funky Gourmet, is preparing a unique array of exquisite desserts for guests to enjoy on Friday, June 3 at The Plaza Hotel during our 2022 Gabby Awards.
Selekos is passionate about designing sweets and sharing them with the world. He got his start as an apprentice baker on his native Astypalaia and remains connected to the island and its culinary traditions.
The special course he’s prepared for our big night includes the following desserts:
(1) Galaktoboureko – Semolina vanilla cream, lemon/kumquat confit and crispy phyllo.
(2) Mosaiko with sour cherries sweet spoon – Kirsch cream, bitter chocolate cremeux, sweet spoon sour cherries and classic mosaiko biscuit.
(3) Mandarin Mastiha Aroma – Mandarin Mastiha soup, milk chocolate, mandarin biscuit, white chocolate and mandarin/lime zest.
After numerous jobs in well-known restaurants — including serving as head pastry chef at the world-famous Scorpios in Mykonos — Selekos joined the dream team of Funky Gourmet, a globally-renowned two-Michelin Starred restaurant in Athens with a summer pop-up at the Costa Navarino resort.
Antonis is responsible for creating new and exciting desserts at Funky Gourmet while simultaneously working on new projects in London, Qatar and Dubai.
